WHAT IS YOUR FAVOURITE PLANT-BASED CHRISTMAS MEAL IDEA? 🎄

I’d love to know what you guys are planning on making as the “centre-piece” for your Christmas meal?

I love a mushroom wellington… @deliciouslyella and @5oclockapron both have amazing recipes for different versions of a mushroom wellington 🍄

I’ll be in sunny Cape Town (sorry, not sorry! 😜) for Christmas this year, so we will be having lots of delicious salads and a “braai” (barbecue). There will be a mix of meat-eaters and vegetarians on the day, so we will have two different “braais” going on at the same time! 😂

CHRISTMAS LOAF 🎄

The smell of this baking in the oven makes the whole house smell of Christmas! ❤️🎅🏻🎄💚

This recipe is ideal to make with your children as it’s so easy…

INGREDIENTS
🌾 2 cups self raising flour
🥣 1 cup oats
❤️ 1 tbsp baking powder
💜 1 tbsp chia seeds
🧡 1 tsp cinnamon
💚 1/2 tsp mixed spice
🩵 1/2 tsp ground nutmeg
🍇 1 cup raisins / sultanas / mixed dried fruit
🥛 1 cup plant based drink (I used Alpro soya vanilla sweetened)
💛 1/2 cup vegetable oil
🌰 1/2 cup chopped walnuts (optional)

METHOD
1️⃣ Measure out all the dry ingredients and mix together.
2️⃣ Add the raisins, plant based milk and oil to the dry ingredients.
3️⃣ Gently fold together and pour into a greased loaf tin.
4️⃣ Bake at 180 degrees Celsius for 40 minutes.

I saw a 9 month old in clinic today and I was chatting to his parents about adding lentils to his diet. So I thought I’d share this post with you all…

👶🏼 Lentils are a fantastic food to introduce to your baby from 6 months of age. They are a nutritional powerhouse, as they are a great source of iron, plant-based protein and fibre.

👶🏽 I’ve spoken A LOT about iron before and why it’s so important for babies from 6 months... their stores of iron start to run out around this time so their iron requirements are super high! So make iron rich foods a PRIORITY when weaning and aim to offer iron rich foods at every meal for babies and toddlers.

ARE GREEN VEGETABLES A GOOD SOURCE OF CALCIUM?🥬 🥦

YES THEY ARE!

🍃 But remember that some green veggies (like spinach) contain high amounts of oxalates which means that the calcium is not well absorbed, as oxalates bind to calcium making it insoluble.

🥦 However, other green veggies such as broccoli, kale, watercress, pak choi and Brussels sprouts are very good sources of bioavailable (well absorbed) calcium.

It’s also really important to point out that the amount of these vegetables needed to meet calcium requirements is HUGE.

FOR EXAMPLE
For toddlers to meet their daily calcium requirements of 350mg per day, they would need to eat 875g of broccoli or 230g of kale per day! 😮

🥛 In contrast, a toddler would only need to drink 300ml of calcium-fortified plant based drink or eat 70g of calcium-set tofu to meet daily calcium requirements of 350mg per day.

MY ADVICE
* Absolutely offer broccoli/kale and other green vegetables to your children, but they are unlikely to meet calcium requirements from these foods ALONE.
* Fortified dairy alternative drinks and yoghurts as well as calcium set tofu are all great, concentrated and convenient sources of calcium for children 👍🏻

CREAMY STRAWBERRY TOFU ‘YOGHURT’ ❤️

A calcium rich recipe for you… it’s SO quick and easy to make and is super delicious and nutritious! The recipe uses calcium-set silken tofu, which is a fantastic source of calcium and has a super creamy texture too.

INGREDIENTS
🍓180g frozen strawberries
💚1 block of silken tofu (349g)
🍯 1 tbsp maple syrup or honey (optional)

METHOD
1. Remove the strawberries from the freezer and allow them to thaw for about 1 hour.
2. Add all the ingredients to a blender and blend until smooth.
3. That’s it, super simple!

NOTES
- Leave out the maple syrup or honey for children under 1 year of age.
- You could use other frozen fruit instead of the strawberries such as mango, mixed berries or banana.

PLANT-BASED SOURCES OF CALCIUM 🌱

Calcium is one of those nutrients that has been found to be low in some children following plant-based eating patterns (according to the VeChi studies). So we need to make sure that little one’s are getting enough…

There are so many plant-based sources of calcium, both fortified and unfortified. Fortified options have more calcium per portion but unfortified foods can still contribute important amounts of calcium (and other nutrients) to your little one’s diet.

FORTIFIED SOURCES OF CALCIUM:
🍞 Fortified bread: 1 slice of white/brown* bread = 60mg per slice (50/50 or ‘best of both’ bread contains around 150mg per slice)
🥛 Fortified plant-based drink = 120mg calcium per 100ml
💚 Calcium set tofu: 500mg calcium per 100g
🥣 Ready Oats: 26g (dry weight) = 350mg calcium
🍧 Fortified plant-based yoghurt: 120-160mg per 100g

*white and brown wheat flour is fortified with calcium (plus iron and vitamins ) in the UK

UNFORTIFIED SOURCES OF CALCIUM:
🍊 Oranges
💜 Tahini
🌰 Almonds (almond butter or ground almonds for under 5s)
🫘 Red kidney beans
🥦 Broccoli
🥬 Kale
🌱Brussel Sprouts

HOW MUCH CALCIUM DO CHILDREN NEED?
0-12 months 525mg calcium
1-3 years 350mg
4-6 years 450mg
7-10 years 550mg
11-18 years 800mg (girls) and 1000mg (boys)
Adults 700mg
Breastfeeding mums 1250mg
